If you want to get really fancy slice a whole vanilla pod down the middle and add one-half to your syrup (or just add a bit of pure vanilla extract). Position the container on the smoker rack, on the grill grates if using the 'Smoke Grenade' option, or in a cold smoker if you have one, making sure it's exposed to the smoke but not directly over the heat source (the 'Smoke Grenade' on your grill or your cold smoker won't have a heat source).  Smoke the syrup for 3-6 hours (I usually let it go about 5 hours), depending on your desired level of smokiness.
5. Cooling and Storing:
Once smoked to perfection, remove the syrup from the smoker and allow it to cool to room temperature. Transfer it to a clean, airtight container for storage (I usually put it back into the container it came in, and just mark it ‘smoked’).
Stored in the refrigerator, smoked maple syrup can keep for several weeks (or longer), allowing you to enjoy its distinctive flavor whenever the craving strikes.
