Sweet Smoke: Exploring the Delightful World of Smoking Maple Syrup

Maple syrup—a quintessential ingredient beloved for its rich, complex flavor and versatility in culinary applications. From drizzling over pancakes to glazing meats, its sweet, earthy notes add a touch of indulgence to dishes both sweet and savory. But what if I told you there's another way to experience the magic of maple syrup? Enter smoking maple syrup—a culinary technique that infuses this liquid gold with a tantalizing smoky aroma and flavor, elevating it to new heights of deliciousness.

The Art of Smoking Maple Syrup
Smoking maple syrup is a simple yet innovative process that involves exposing the syrup to smoke from various hardwoods, such as hickory, oak, or applewood. This infusion of smoky essence adds depth and complexity to the syrup, enhancing its natural sweetness with a subtle hint of wood-fired goodness.

How It's Done
1. Selecting Quality Maple Syrup:
Start with high-quality, pure maple syrup. Opt for Grade A pure maple syrup for a more robust flavor profile that can stand up to the smokiness.
2. Choosing the Wood:
Select hardwoods known for their mild to medium smoke intensity, such as hickory, oak, or fruitwoods like apple or cherry. Avoid using woods with strong, overpowering flavors that may overshadow the delicate sweetness of the syrup.
3. Setting Up the Smoker:
Prepare your smoker (or if you don't have a smoker use the Grill Sergeant 'Smoke Grenade' smoker tube inside of a cold grill!  This works great, and by cold smoking in this way you add smoke flavor without the heat) keeping the temperature as low as possible (typically around 175°F). This gentle heat will allow the syrup to absorb the smoke without caramelizing or burning.
4. Smoking the Syrup:
Place the maple syrup in a shallow, heatproof container. If you want to get really fancy slice a whole vanilla pod down the middle and add one-half to your syrup (or just add a bit of pure vanilla extract). Position the container on the smoker rack, on the grill grates if using the 'Smoke Grenade' option, or in a cold smoker if you have one, making sure it's exposed to the smoke but not directly over the heat source (the 'Smoke Grenade' on your grill or your cold smoker won't have a heat source).  Smoke the syrup for 3-6 hours (I usually let it go about 5 hours), depending on your desired level of smokiness.
5. Cooling and Storing:
Once smoked to perfection, remove the syrup from the smoker and allow it to cool to room temperature. Transfer it to a clean, airtight container for storage (I usually put it back into the container it came in, and just mark it ‘smoked’).
Stored in the refrigerator, smoked maple syrup can keep for several weeks (or longer), allowing you to enjoy its distinctive flavor whenever the craving strikes.

Culinary Uses
Now that you have your smoked maple syrup, it's time to explore its culinary potential:

Glazes and Marinades: Use smoked maple syrup to add depth and sweetness to glazes for roasted meats, such as ham or chicken. It also makes a delightful marinade for pork tenderloin or salmon.

Drizzled Over Desserts: Elevate desserts like ice cream, cheesecake, or grilled fruit by drizzling them with smoked maple syrup. The smoky-sweet combination adds a sophisticated twist to classic treats.

Craft Cocktails: Create unique cocktails by incorporating smoked maple syrup as a sweetener (I’m looking at you, Old Fashioned). It pairs beautifully with bourbon, whiskey, or dark rum, adding a touch of smokiness to your libations.

Breakfast Delights: Serve smoked maple syrup alongside pancakes, waffles, or French toast for a breakfast experience like no other. Its complex flavor will have you savoring every bite.

In Conclusion
